I didn't add anything to thicken this batch, but when I do I use masa flour. Didn't use tomato paste either, only crushed tomatoes. On top of fresh jalapenos I also diced up 5 or 6 chipoltle peppers in adobo sauce to give it a nice zap.

I don't use anything to thicken chili, cook it long enough and the liquid from the beer evaporates out and I have thick Chili.

I don't use anything to thicken chili, cook it long enough and the liquid from the beer evaporates out and I have thick Chili. That's what I do most of the time. Usually only use a thickener if I'm making a quick chili.

[/quote] I'll use either corn starch or masa, but real masa is easier to work with I think and won't clump if whipped right. Little bit goes a long way. On another note when making Cajun gumbo, breaded okra uncooked will thicken your gumbo and add great flavor as well
