Making a pot of hot deer chili with cornbread. I'm sweating just smelling it. A pot just for me, gonna be real good in a few hours. Trying a new Emeril recipe, modified a little. House smells great, can't wait. food

Beans will take on the flavor of your chili while mesa will dull the flavor. How do you thicken your chili?

I didn't add anything to thicken this batch, but when I do I use masa flour. Didn't use tomato paste either, only crushed tomatoes. On top of fresh jalapenos I also diced up 5 or 6 chipoltle peppers in adobo sauce to give it a nice zap.

corn starch works well to help thicken the sauce. That looks great.

I don't use anything to thicken chili, cook it long enough and the liquid from the beer evaporates out and I have thick Chili.
