I was so excited when Santa Claus(My old lady) got me a meat grinder for Christmas. Instead of sending our deer meat to the processer, I was going to make some breakfast sausage at home. Do any of yall have a good recipe for MILD breakfast sausage? I am a wimp when it comes to spicy food. Thanks in advance.

Haha, Santa also brought me a meat grinder for Christmas. I saw these diff Sausage 'Kits' at Cabelas and one of the kits is for Breakfast Sausage. Note: the kits are "Pre-measured for 100 lbs. of meat " Cabelas Sausage Kits
I gave up Hunt'n + Fish'n...It was the worst 15 Minutes of My Life!!

When i first started, i used this site: http://www.sausagemania.com/tutorial.htmlAbout half way down, there's an excel spreadsheet you can use.. Just plug however many lbs. you're going to make, and it will give you the exact measurements. I will say from experience, go lite or completely leave out the Marjoram.

I make my own. I use Atkins Sausage Seasoning. I grind a pork roast and mix it 50-50 with the deer meat. Add seasoning to taste. Be sure and mix the first seasoning into the meat before grinding. It mixes better that way. Mix a little, cook a patty, and go from there. I made 30 lbs. last Monday. Makes great breakfast sausage.

Leggs Old Plantation seasoning mix. Does 25 pounds from each bag of seasonings. Great flavor and all you have to do is grind and bag!! I run mine at 70-30 deer to pork butts and it is great! I use the burger plate and run it through one time.
Big ones line-up, little ones bunch-up

This is how I did it. The recipe for the spices is in the description. Was delicious and worked out well. Only thing is the price of Sage. Man they are proud of that stuff. I should start growing my own.
