Hand chop head of cabbage semi coarse in large bowl. Hand chop whole sweet yellow onion semi fine. Optional - hand chop bundle of green onions. Mix it up, toss it around in large bowl. Add salt and coarse black pepper to taste. Sprinkle about 1/4 cup of sugar on top and toss to mix. Taste it. Adjust sugar to get sweet taste. Sprinkle apple cider vinegar to moisten mix and toss to mix. Use enough vinegar to absorb all dry ingredients. Chill it covered in fridge overnight. Toss and taste in morning. Adjust salt, pepper, and sugar to taste. Drain liquid from mix, toss to mix and finish with dollop of miracle whip.
Leftovers are better second day but may need draining again. Great on a chili dog.

Sweet onion chopped in food processor head of cabbage shredded with food processor Salt and coarse ground black pepper to taste miracle whip enough to hold it together
Being diabetic, I don't add sugar. Most people never seem to miss it.

I always hand chopped my cabbage, but with just me, I now buy the coleslaw mix.

The bigger chunks make better slaw. Do a half head of cabbage and have another cabbage dish next week.

we just buy the cole slaw in a bag, not the mix with dressing. I chop up a tomato and use salsa as a dressing. close to zero calories, low in carbs, no sugar ... pretty simple.

My wife's coleslaw recipe, It came from a local restaurant back in the 1970's. It is 10 times better the next day.
Ingredients 1 large head of cabbage, finely shredded 1 small head of red cabbage finely shredded 1 medium bell pepper, finely chopped 1 medium sweet onions, finely chopped 2 carrots, grated
Dressing: 1 cup sugar 1 teaspoon salt 2/3 cup vegetable oil 1 teaspoon dry mustard 1 teaspoon celery seed 1/4 teaspoon freshly ground black pepper 1 1/4 cup cider vinegar
Combine coleslaw vegetable ingredients; chopped cabbage, chopped bell pepper, chopped onions, and grated carrots in a large serving bowl.
In a saucepan over medium heat, combine remaining ingredients; bring to a boil. Simmer, stirring, until sugar is dissolved; pour over vegetables and toss well. Cover and refrigerate until thoroughly chilled.

Sweet Southern Cole Slaw
Finely chopped cabbage 3 parts yellow mustard 1 part Hellmans or Dukes mayo Yellow onion to taste Garlic to taste sugar to taste Apple Cider or rice wine vinegar to taste
Mix well and refrigerate over night.
If you like, finely chopped red or green bell pepper.
