I was looking through some pics with kayak fishing guide Shane Davies recently and ran across this one. I asked Shane about the odd looking photo and this is what he told me... LSC: Shane Davies and the Baja Jack

and I bet that's some good eats there Nope, not really. Jacks are best released or saved for shark bait. Put up a heck of a fight though, lots of fun to catch. Cool story.

Thanks everyone for the comments. .. and I bet that's some good eats there Nope, not really. Jacks are best released or saved for shark bait. Put up a heck of a fight though, lots of fun to catch. Cool story. TxAg is correct. According to Shane, jack crevalle isn't, "...considered to be of any food value due to their dark, bloody meat. However, [they] always kept a few for the workers at Hotel Punta Colorada where [they] stayed. They would make a Mexican stew out of it known locally as machaca."
