I usually use Rhodes Bros in Kerville to process my deer and they make an awesome dried sausage. This year I used someone else and while they make a fine smoked sausage, they don't offer a dried version. I've got about 100lbs of smoked sasausge and really want some dried. Has anyone ever put smoked sausage in a dehydrator to make dried smoked sausage? Would there be any concerns doing this?

Define smoked sausage.

Is it cold smoked and still raw? or is it cooked?

Most people put extra preservatives in sausage that is to be dried, I would be leary of it.

I've never done it (in dehydrator). Like Red Chevy mentioned, most people use sodium nitrate in dried meat products vs the sodium nitrite most use in their smoked sausages. I don't know if you'd have anything to worry about or not. Watching this post.....

yep, I agree ... not sure how well preserved just regular smoked sausage would be by drying it ...

Preservatives or not - as long as the meat was properly handled and kept cold, drying on a dehydrator will work fine. Our family has made our own dried sausage for generations and the recipe has no preservatives other than salt/smoke. However, the ratio of fat to lean meat will be more of a determining factor in your final product. Too much fat and your dried will not firm up like you may expect and it will be greasy. I use a ratio of 60% deer to 40% pork butt for the dried sausage - flip that to 40% deer to 60% pork butt for cooking sausage.

Not the same as drying in full link but sliced and put in the dehydrator works for sausage chips that are still tasty, as long as the fat content isn't too high in the sausage
