Heading down to Texas for my 1st hog hunt next week. Hoping to get a couple of medium sized ones for the freezer. If I get some trying to decide if I should just cut them up myself and maybe bring them in to have the butcher do this. Doing a little looking on line Skinning and quartering does not look a lot different than cutting up a deer. Just not to sure about cutting the different cuts of meat from there. Is there that much more to do that a butcher might help with? Thanks for any tips on what to do with my 1st hogs?

If you're comfortable with processing your own deer, I'd say go for it. I don't have the space or equipment to do the whole thing myself. I have shot several and took front shoulders, hindquarters and backstrap and left the rest for the coyotes. Front shoulders and hindquarters make great pork roast or pulled pork. Never had much luck with backstrap. I've taken a few to processors and got excellent breakfast sausage, tamales and ribs, in addition to the roasts.

Hunting near Stephenville. One of my issues with hauling the 1/4s back to mn and processing myself is we typically set up a table out in the garage for cutting deer. Pretty chilly this time of year to be doing that. Looking around on line I see there some of the wild game processors will take the hogs quartered and process what you want from there. With any luck the ranch Im hunting on will have someone local to recommend me to.

Think the other positive side to getting some of the meat processed in texas is you guys know what to do with a wild hog. Talking to my local butcher he said he could help but not very familiar with them. Wouldnt mind getting some sausages made with some southern flavor to them.

just remember that if you take to a processor, it might take a week or two to process ... not sure how long you will be down here.

Shoot a couple 75 lb hogs, quarter and debone them and put all the meat on ice bath. 4 days of exchanging the ice water until it runs clean.

Do it exactly like you would do a deer.. Really don't matter how the meat comes off the bone other than the straps.. Id keep the quarters on the bone and save for a good slow cooked roast.. You can always bag up what you don't eat for pulled pork samiches later

If you can shoot a 30lb size sholt do it.. Skin and gut it to cook whole.. THE best eating you'll ever have

Thanks for the advice guys. Took the last couple days to drive myself to Texas. Try to find a range tomorrow to sight in gun and then get license. Looking forward to hog hunt next week.
