No doubt it does. Going to build a smokehouse this year so I won't have to go to a processor at all.

We started making summer sausage last year and loved it.

We were getting to the point it was hard to eat all the deer we were killing in a year just in steaks sausage and hamburger. Last year we expiremented with pastrami, chorizo, and summer sausage and not a single one came out bad. Looking for new stuff to try again its a lot of fun and usually tasty!

Photo looks tasty especially with a piece of that cheese and a cracker!

Great job, I am going to try a few new things as well. I was watching Meateater and came across 2 books that have some great ideas. Preserving Wild Foods by Matthew Weigart and Charcuterie by Michael Ruhlman both have some great looking ideas on smoking and curing meat. Good luck.

Had a chef help me dry cure some venison chorizo a few years back and it turned out great. Been looking for a cheap wine fridge that I can use to do it again.
