No more turkey, Ham and sides. Again like Thanksgiving the menu is :

Chili Verde
Fideos
Tamales
Beans
Rice
Corn and flour tortillas
Homemade salsa

My girls do not eat ham and turkey, so I cook what they like.

Made some Bacon, egg, and cheese sandwiches for breakfast this morning and of coarse I fried the eggs in bacon grease.

My immediate thought, sliced jalapenos in that sandwich. I wear two hats, for dinner it is sort of Dixie: Turkey, collards and cream cheese, spoon bread, candied yams, etc. But then the hat turns into a sombrero- the left over turkey is used in enchiladas with green chile and cheese. I'd do the tamales, and they are supposed to be a New Year's Eve thing, but never could get them right.

We had a brisket that I smoked that wasen't worth a hoot,lucky for me I done 2 BIR chickens. Hello MES,one in my future soon.

We were in New Orleans for Christmas and found a restaurant in the French Quarter that was serving turkey and oyster dressing for their Christmas remoulade dinner. We made oyster dressing at home one Christmas and loved it. I was really looking forward to the meal. Total BUST. The dressing was full of cayenne pepper and the sweet potato dish was so heavy with cloves that it burned your mouth. Couldn't taste the oysters, couldn't taste the dressing, and couldn't taste the sweet potatoes. Should have had a V8 or something! frown
