If I have company and time to make them, I'll make Scotch Eggs.
You just soft boil the eggs, peel them and refrigerate until cool all the way through. Make as many thin patties of pan sausage as you have eggs. Put the egg on the patty and form the sausage around the egg until you have a boiled egg in a sausage ball. Roll the balls in bread crumbs and deep fry until golden.

Best egg dish I've ever had was soft scrambled eggs, with mushrooms and mushroom dumplings. Best dish I've had period, actually. At Barley Swine in Austin.

On special occasion when eating out, Eggs Benedict or Eggs Florentine.
