Anybody got good suggestions on how to prepare? I've done burgers out of whitetail and have anbit of trouble keeping them from falling apart.

Grind some bacon in with the elk or deer and it will hold together and taste great. Another way is mix in some egg white will hold them together.

Of course it makes great chili also

Another thing to use is the 80% lean 20% fat ground beef, mixed 50/50 it is about like ground sirloin.

I had elk meatloaf at the Stanley in Estes Park, CO. The recipe had won some awards. It was very good, it had grated carrots and was about the size of a clay trap target and around the outside rim was bacon. They wouldn't give me the exact recipe.
