Man looks good, im cooking Buffalo and Elk backstrap later today, my moms never had either so there in for a treat maybe ill post pics and keep the thread going.

Cows are better to eat for sure and young bulls. We get clients that come shoot a bunch of them yearly just for meat. Big bulls however are pretty tasty as well and nilgai is better than axis in a lot of our clients and my opinion. The amount you get out of a big bull is probably 180ish pounds of meat. However if you do ground and sausage out of some you can hit the 200 mark easy. Out of a cow you are probably looking at half so 90 pounds about. How the heck are you processing these things?!?!?!?! My cow probably got us 90lb and it was SMALL. My uncles got them at least 130lb. Do y'all just quarter, and backstraps?
