Anyone boil the peppers before stuffing? Mine are crunchie when out of oven, which I don't like. Any ideas?

roast them on an open flame to get a dark, blistered skin then put them in a bag for 10-15 minutes.

If you wrap them in bacon and cook them long enough they get soft.

I like them sliced into strips and sautéed with onions. Eat em as a veggie.

yep, if you cook til bacon gets a bit crispy, the peppers are usually quite soft.

or are you talking about stuffing them with like pimento cheese or tuna salad (like using pickled jalapenos?) ... My wife makes homemade salsa and she just takes a small sauce pan of water to a boil and drops in the peppers to make them a bit soft before going to the blender. you might try that if thats the kind you are looking for to take some of the crispness away.
