what do you need to transport a deer for another person to the prossesr

You will certainly need proof of sex and a tag appropriately attached to the carcass. You might want to ask the processor.

You need a wildlife resource document. Can be found on TPWD website. Both the hunter and the transporter need to complete information.

Not to hijack, but what about quartered deer? Does the head need to accompany the quarters or is it considered "processed" at that point? Certainly, I can think of no way to keep the head attached to the body when it is just meat in a freezer.

Still need a wildlife document with the meat, has to be at it's final destination, or processor to be processed. Dont need the head, tag and document stay with the meat.
