Read ones with gaping wounds should be dressed within a day or 2........

If I have room (4 fridges/4 chest deep freezers.... I usually have room) I age all birds by placing them in a plastic grocery bag and putting them in the fridge for several days before cleaning them..... Gaping wounds or not. I've had piles of geese stacked outside on the porch in cold weather for several days which basically accomplished the same thing.....aging. In my opinion, it makes a significant difference in the ease of dressing the birds and the flavor and texture of the meat.

Been doing it for years as have my folks. We've never squirted or sprayed from fouled meat.

I leave them belly up in the fridge for several days before cleaning them as well. Never have gotten sick.
