The factory guns are/were VERY accurate rifles right out of the box. I think Remington was rather surprised by it all. Thinking of picking one up from one of the auction sites and re-barreling it into what I want (.243). Any problems doing something like this with the 788 action? Anything I should be aware of that could cause problems down the road or add to the cost factor?

Rifles are similar to boats and young women...there's no end to how much money you can pour into them without making them any more useful.

Pretty sure they make a 788 in a .243.

Go for it. There have been lots of customs built off the 788 and some very accurate ones. One thing I would not do is flute the bolt on one, with the rear locking lugs the bolt body handles all the rearward pressure to the lugs. Would also not remove any metal from the receiver for the same basic reason.
The main problem with the 788 is the bolt handle coming off, it is tac welded to the bolt. Have seem some held on with JB Weld after the handle came off.

Pretty sure they make a 788 in a .243. 243 and 308 were the most popular calibers in the 788. 22-250,6mm, 222, 223, 7mm08, 30-30 and 44Mag were some others with the last 3 being the rarest to find

A lot of br guns were built of that action at one point.
