I remember someone posted a recipe with pictures of them making homemage duck sausage awhile back. I thought it looked interesting so I took about 12 pounds of duck breasts ( mixed bag of divers and puddle ducks) to my processer about a week ago. He mixed it with some beef trim and added chesse and jalapenos to the batch. I got about 8 big links and decided to try one this weekend at deer camp. Well it wasn't bad...........but it was, well.........different. I think Schott's in Helotes did a good job but in the end it was still duck!

I think I may stay with the ever popular bacon and jalapeno cream cheese wrapped duck breast from now on. You don't know untill you try! I will serve the rest of the duck sausage at parties to some other hunter friends and get their opinions as well. Has anyone else ever tried duck sausage?
