We made 25 lbs of antelope chili this past weekend. Cant tell the difference between it and deer chili.

Got the pronghorn back from the processor, only tried the sausage so far but man it was good!

I've killed about 15 of them over the years. I like the meat. Matter of fact it is probably my favorite game meat. The thing with pronghorn is that they have a hollow hair that insulates them really well and they are usually hunted when it is warm. Getting the hide off and getting the meat on ice quickly is the key. If you shoot one and just field dress it and toss it in the back of the truck while looking for another, then the meat won't be too good. I carry a 150 QT Coleman cooler with at least 5 bags of ice in it and as soon as we take one we get it on ice before we do anything else. Here's a pic on a good buck I got in CO this fall, and he is eating just fine:

I have killed them in Wyoming, Colorado, New Mexico and Texas. Probably killed more than a dozen. It is one of my favorite meats. I do get them quarters and in a cooler quick. My hunting buddies also enjoy the meat.

My buddy just put one down in MT. We ground it up with some geese we shot this season and pork fat to make brats.......it didn't stay in the freezer for very long. Probably the best sausage we have ever made.
