looking for some opinions, I have never turkey hunted before but plan to start this year. How do they compare to store bought turkeys? Do you keep the whole bird or just breast it out?

I / we just breast them out and fry them like chicken tenders.
taste wise breast is about like store bought, the rest is chock full of tendons

I just breast them out. I beat the breast with a mallet on both sides to tenderize it a bit and slice it. Marinate in soy sauce for a couple hours. Then stir fry it with veggies. Or make tacos. Great stuff. Just don't over cook it.

I thought they were grainier than store bought and not nearly as flavorful. However, I only shot my first 2 last year.
I breasted them in the field and marinated them in pineapple juice (per a hunting buddy's recommendation).
Next time, I'll try a stir fry as suggested above or make a white chili. I hate to chicken fry them (which I tried with the best results). It seems that cooking method reduces the unique flavor of the meat you are using. Maybe that is where "it tastes like chicken" comes from?

I like wild turkey too much to just breast them. the thighs are great eating (not full of tendons) and the legs though tough make great soup, gumbo, potpies.... there are 2 ieces on the back that are white meat and as good as the breast which are easily removed and are about 3 inches long 2 inches wide and one inch thick.

Breast them and cut strips out in pretty small pieces then put lemon pepper on them and drop them in olive oil in a skillet for a bit.....mmmmmmmmmmmmmmmm

Breast strips dipped in buttermilk, rolled in flour with a little Salt, Pepper and Garlic, then deep fried are every bit as good as quail, in fact if you can taste the difference , you're better than me. Try this sometime for your gravy, "Instead of water or milk use a can of Rotel and make tomato gravy".

I have to go with the chicken fry route and flour gravy. I think it taste ever bit bit as good as fried chicken if not better. I would think it has to be healthier than store bought poultry. NO MSG

NO MSG Store bought poultry with MSGs are not as concerning as what the are being fed. Food full of harmonies and steroids to make them grow faster are more of a concern to me. Wild birds have more flavor as well from a diverse natural diet. I fry some of the breasts but also make fajitas from some.

I like to chicken fry mine or sprinkle them with Tony's and smoke them. I usually just breast them out, but will start keeping the thighs and drumstick parts...

Right on Kmon! Matter of fact I have a couple of drumsticks/thighs in the freezer now that I need to do something with...Trying to decide on pot pie or turkey and dumplings....hmmmmmmmm

Chicken fry the breast in a skillet and gravy is my favorite. An option to this is to chicken fry then place in a slow cooker, or roasting pan, add cream of celery soup, or cream of mushroom, or cream of chicken, your choice, add chopped onion, celery, carrots and mushrooms and some water, or milk. slow cook until very tender 3-4 hours. Steam a pot of rice. Spread over the rice and eat. Works great on pheasant too.

I keep the whole bird. I personally have never found the legs too tough or issues with tendons. The whole bird tastes great and it's a waste of a lot of good food to not eat it all.
Deep fried with tony chachere injectable seasoning is very good too.

Breast goes for Fajitas, stir fry or steaks like most. I debone the thighs and cut into six pieces and make Kabobs with them, don't need bacon to keep them moist either (although there is nothing wrong with adding bacon!).

If it is grainy, it is probably overcooked.
