The basics for what is considered the proper way to make an oyster poboy, but who cares about proper,
make it like you like it.
Here is Emerils Recipe for the Remoulade sauce, tinker with it.

Got those from an oysterman on the coast, rarely buy them shucked in the stores dont trust them & arent as good.
Central market in Dallas has them in the rock but they are proud of them.
The best oysters I've seen lately are from south Texas.

No kiddin I have eaten them from all over the place and the two best that I have ever tasted are from Apalachicola Bay and Matagorda.

It's called Swampy's. It's on 1093, about a miles west of 723.
