I hear Pecan Lodge uses a mix of Mesquite and Oak. I am still on the big side of the smoking learning curve, but I would be willing to bet 80% of how good a brisket or most other meats turns out has a lot more to do with the process than what wood you use, just my 2cents

correct, once you can get the brisket cooked perfect and tender you have 90% of people beat. At that point you can start messing with the different woods and change the flavor a bit



bends over perfect, and still holds together under its own weight, perfect up

I hit up Heims bbq in Ft. Worth a couple of weeks ago. Best brisket I've had in the metroplex. They are only open Wednesday evenings and Saturday though. IMO, nothing beats john mueller meat co. in Austin

I had heard good things about Big Daddy's Ribs and BBQ in Little Elm, so went and tried them out. The sliced brisket was shamefully bad, thinly sliced, tough, too lean, and lacked much smoke. I din't have a single piece that was over two and a half inches in length either. Pulled pork was decent enough and had bark on it, which I like. The baby back ribs were good, but they charged $4 extra to add it to my 3 meat combo plate and only gave me two little ribs. Corn casserole and fries were great, but I wasn't that impressed with the barbecue itself. No return visit for me.

Had a buddy that had never been to Pecan Lodge, so I told him I would meet him there for lunch one day. Still the best barbecue in DFW (at least in my opinion). There brisket and ribs there are incredible.

Hutchins, in Frisco, has the best brisket that I have had in this area. Believe I will go there today for a "fix", as it is addictive.

Jambo's BBQ has opened a new location in Arlington. Have not eat there yet but understand they are going thru about 25 briskets a day and selling out pretty early.
The Rendon location is off the chart good brisket so would expect Arlington to be good also. cheers

I live two blocks from Pecan Lodge and still have not tried it out yet. When I still lived in McKinney it was always Hutchins for sure for BBQ!

Too many pages to read through haha but if anyone is in Lubbock or surrounding areas, Evie Mae's in Wolfforth is kicking out some pretty good BBQ Thursday-Saturday.
