Elk is very good and low in fat, no hormones, no pesticides - very healthy. If you're going strictly for taste of the meat compared to a cow, shoot a cow elk they're better than a bull IMO.
Elk does not taste like beef - someone you know might have an elk steak in the freezer - that would give you an idea.
P.S. That is a smokin good deal - landowner tags for cow elk in NM are in that range and bull tags run about $3500 - $8000 with NO guarantees.
