Learning to do it yourself and putting a table and cutting board in your garage. Good, the most cost effective and satisfying.

What is wrong with Kuby's? I read a lot of goog things about them and took a hog there a coupld of weeks ago. I'm supposed to pick it up this week.

Processing fees with Kubys will get expensive. That is probably why he said that. But the trick with them is to skin/quarter and debone the hog yourself and only take in the meat. Then you only pay a price per pound fee amount depending on what your having made out of it. They truly make some of the best sausage and processed meat products than any other processor I have ever used.

+1 on processing it yourself. I process all my game and can't imagine paying anyone to do it, plus I am picky about what cuts (and not necessarily standard butcher cuts) I want for various purposes.

I would go for the beer deal too!

Keep em coming cheers , back in Europe they say when you mix meet, more you put heart and sweat better it will taste. Plus I appreciate my own work and know what I have in my sousages.
I like to cure my meat but limit chemicals to minimum.
As I said your place I will bring grinder, mixer and stuffer.
You also need to purchase casing, beer and you will do work as well. I will also bring cure as it will take 4 oz. for 100lb of meat and you can not buy it in local stores. Smoker stays home.
