Ok, we all know how to do it with bacon and a jalapeno, but I have been doing it a little different. I take the breast and filet it, then I take one side and put cream cheese on it, not much,just a dab, then the jalapeno, then the other breast, then wrap it in bacon and place it in a fish basket(one that you would use to grill fish in). I cook them in that and the bacon really sticks to the breasts. It takes only half a slice of bacon to go around. These are like little poppers!! They are so good this way.
Now, it is a lot of work but if you filet the breast then freeze them to cook later--1/2 the work is done for you.
I also soak my toothpicks in water, they tend not to burn after soaking a couple of hours.

Man that sounds good I will have to give that a try this weekend. We have done the normal way for a long time. We also bread the breast and deep fry them with some gravy and man that is awesome.

You can do chicken as well if you do not have enough dove, just little nuggets of chicken or if somebody does not like dove, cannot imagine that though.
If you want a nice snack, take a pickled jalapeno, seed it, cut it in half and put cream cheese in it, wrap it once in bacon, sprinkle brown sugar on it and bake it on a pan or in a dish for about 20 minutes at 350, or until bacon is done. Man, this is good, makes a nice snack.

Sounds great steve, I'll give that a try opening day or this weekend. The fried dove is what I've been wanting to try to along with good ol cream gravy, fried potatoes, fried okra....OK it's my fried day of the month...lol with of coarse my favorite beverage...;)

got 30 birds now in the freezer....really want to cook them, but I think I will wait until Monday or next weekend. Then I need to make Dove and sausage gumbo.
If I wait to grill mine, my buddies will get so starved for them they will do it and I can eat thiers..LOL.
Like tonight at the TCU game, heard a rumor that some were going to be on a certain tailgate party.....

You missed one very important step! Gotta marinade those dove breasts in Tiger Sauce before you wrap them up. It's awesome!! Everything else is perfect though, that is the best way to cook em!

The old owner of the place where I dove hunt didn't like people just breasting out dove, (like I did all of my life before). He considered it wasteful and disrespectful to the bird, and there were some that weren't invited back over it. So, for many years I/we plucked every single bird. After he passed away I went back to breasting them out. Yes, that does look good!

never plucked one myself. I went out with some city boy friends years ago, got to the house to start cleaning birds, I was done with my 15 and they were just finishing up number 1. They asked me how the heck I cleaned my so fast ... that's when I realized they were plucking. after about 2 birds, they were breasting them out pretty quickly. Not much meat of the legs! Done the same with quail, duck & turkey.

I like to sautee the hearts and add them to my dove & brown gravy over rice. Hmnnnn.

I can pluck 10 dove in about the same time it takes most to breast 15.
It's actually very easy and the feathers just fall right off.

don't forget the gizzards ... but be sure to cut them and remove the gravel sack in the middle. We saved the heart & gizzards but don't recall saving the livers.
