Kaspers in Weimar, Vincecks in East Bernard, and Doreck's in Santa Fe, all make a tasty sausage and can be trusted with YOUR meat. Whoever said 9th ST meat market in Texas City, you better have some tough chompers for the bone they leave in, good taste but poor quality.

J4D in Gatesville is by far the best processor I have ever used. If you live or travel through the Gatesville area you should stop by and check out their facilities. They just built a new building last year and it is first class.

J4D in Gatesville. Everything they make is excellent. I have been using them for the past 3 years and I would not even consider using anyone else.

Another vote for Hudson's on South Congress in Austin, large selection of products and reasonably priced.

Penshorn in Marion is fast and they have very good breakfast
sausage.

His Jalapeno and Cheese Sausage is as good as you will find. His technique for smoking it is incredible. I have friends lining up to pay me for the J and C

I've had excellent experiences with Hunter's Creek in Liberty Hill, north of the 29/183 intersection on 183. I've had them process deer, pigs and blackbuck and they've always done a great job, zero issues and reasonably priced. Their smoked sausage is excellent, I've had my last two pigs completely processed into smoked sausage.
