never took anything to hang on wall but have a question in hopes that changes this year. Do you pay at time of drop off or pick up?

Usually a 50% deposit at drop off. Balance when complete.

Usually a Taxidermist will work with you on being able to make payments.

If I know the taxi well enough, I will pay it all up front when I can. Most ask for 50% deposit when they start.
Are idiots multiplying faster than normal people?

If you want some friendly advice, get a haircut and take a bath. You wouldn't get hassled so much.

Mine doesn't want a deposit. He wants full payment when it's done. When I drop of several animals, I usually pay for the tanning when it's done, which is deducted off of the final bill. My previous taxidermist wanted a deposit big enough to cover tanning and price of the form. I would also make payments towards the final bill to lessen the impact when it's done. I'd just drop by and give him a hundred bucks, or more when I had the cash. For pets, he would require full price upfront because half of the time, the people would never come back to pick them up. He had quite a collection of cats, dogs and parrots.

The taxidermist I use like Eddies, does not require a deposit from me. However, I usually put a couple of hundred down to better 'hide' the cost of the taxidermy from my spouse.

50% if what I have seen is most common but a few of the bigger shops haven't required a deposit. I once paid 100% up front to a local taxidermist with the promise of a quick turnaround. I had to track the guy down 2 1/2 years later and it took a visit to his house to get my stuff. There is nothing wrong with paying it all up front if you know the taxidermist. Just keep in mind that if they already have your money, there is no incentive to do your mount quickly.
