I appreciate any advice here.

What fps should I be looking for out of these? I've got a chrono that I've never used so gonna break it out and measure these.

Here are 2 from load data. 24 inch barrel is what most data use. Look at the load data site for starting and max loads

Depends on the load, the barrel, and other factors. Honestly, I'm seldom concerned about finding max speed and more concerned about the most accurate load. That is, provided it is a reasonable speed. "Speed kills" is a true statement, but you gotta hit the vitals first. Most anything we are likely to shoot is not going to know the difference in 200-300 fps. Of course finding the speed of your most accurate load will aid in developing a dope chart if you desire.

Varget has always worked for me in 308s..
Start at the middle of the book data going up in .2 grains running a 2.80 COAL
I have been able to find a load that would cut one ragged hole in numerous rifles that way.

Here are a bunch of different loads guys are using out there. Quite a number use Varget.

My own load for a Howa 1500 22" barrel is:
43.5 gr Varget
2.8 COAL
Lapua brass
WLR primers
