Made some fajitas with back strap last night, turned out really good. I marinated in some white vinegar, oil, and seasoned with chili powder, cumin, garlic powder salt and pepper. Grilled to medium/medium rare over charcoal, turned out great! Pics are before the cook and I forgot to get after pics. My MIL/FIL stopped by while we were eating and tried it and they both thought it was great and they dont care for much in the way of game meat! Cooked some mini steaks while was waiting on fajitas to marinade salt pepper and a little garlic, they were outstanding! Hope we can snag a few more does because I need some more meat for the year!!!

I slice the backstrap with the grain for grilling. I then slice it across the grain and throw it in a pan with sizzling onions for a minute or so.

Man those steaks look awesome! On your straps did you cut a strap lengthwise in half? Yes, cut I 1/2 lengthwise. Wanted them to be 1/2-3/4 inch thick or so. When you slice to eat make sure and cut cross grain.
