Gonna cook up a pot of purple hulls today, have some smoked ham hocks, piece of salt pork and some link sausage to put in pot. Will add some onion and 4 cloves of garlic.
Anyone have anything to add such as spices to put in the peas, I don't have much experience with these legumes.
Any suggestions are welcome.

Ham hock for sure, I put a bay leaf in there too.

Fresh or frozen purple hulls need water, salt, bacon drippings, pepper and coarse chopped onions. Serve with vinegar from your pickled pepper jar and cornbread. Save the ham hocks for beans. No garlic unless you want Texas caviar but that's another story. No bay leaf either. Purple hulls stand just fine on their own.

I agree....no bay leaves in purple hulls they don't need that kind of doctoring

What's wrong with garlic in the peas? What is this Texas caviar you speak of?
