Excellent processing from Castroville but I should have had them downsize the roasts for single portions...my bad. Fresh frozen vacuum sealed so what do you think half them (meat or hack saw SLOWLY) while frozen and then repackage OR thaw and slice repackage and freeze again?

I'd just do them one at a time. Take them out of the freezer and let them soften a little. Re freeze what you don't want. It's about the same thing I did with my thanksgiving turkey.

Cook a whole roast and freeze the leftover portions for later.

Thanks guys. Bill think I will go with your suggestion and thaw to the point I can cleanly slice then shrink wrap and re-freeze. Thanks

Get a good Weston Butcher saw. Cut the roast in smaller servings. Love my Butcher saw
