A guy at work shot a buck last night and he found it today in a bayou covered in 3 foot of water. It was in the mid thirties overnight but I'm not sure of the water temp. He was dead for 10 hours. Think he's still good?

I would say no. If that muddy water got inside the body cavity through the entry and exit wounds I would not chance it. Water temp would be more critical than air temp also IMO.

Cut off a piece of meat and cook in hot skillet with no seasoning, will know from smell if bad
