First time I've used a Crock Pot for this, for carne g I normally use a cast iron skillet. I added too much water so took longer than expected but turned out pretty darn good. Good thing I had beef ribs & boudin sausage on the pit or we would have went to bed hungry.
Almost used up the last of last year's back straps, ended up putting Whitetail, Fallow, & Eland straps in the pot. I guess the coolest thing about this meal to me was that I was able to have my kids with me when we took all 3 animals. Anyway....not as thick as I like but was/is some good stuff, bout to hit it again.
Step 1) Shoot critter, butcher and prep for table. Cut meat into cubes & season with fajita seasoning.
Step 2) Dredge in flour and brown in a skillet.
Step 3) Dump in Crock Pot, add Rotel & a LITTLE water. Stir, put on lid, set on low and go about your day.
Step 4) When about done, add Carne Guisada seasoning to taste/thicken. Toast up some torts and get after it. It's that simple and mighty tasty.
